I promised to share my Sweet & Sour meatball recipe on the last episode of Thrive Life in Real Life. This was a fun way to add red pepper powder; I substituted it for half of the bread crumbs called for in the original recipe. And I added some into the sauce as well, for extra flavor and color.
This is a quick and easy recipe that showcases how convenient it is to have Thrive Life foods in your pantry. I didn’t have to chop any onions, there was nothing spoiling in my produce drawer, yet I still had a ton of flavor and nutrition ready in no time.
Sweet and Sour Meatballs with Thrive Life foods
Combine all of the meatball ingredients in a Kitchenaid bowl and blend until smooth, or mix it up by hand. Drop 1 Tbsp of the mixture at a time onto a lined baking sheet, and then roll into balls. Broil the meatballs on high for 5-7 minutes, until the tops start to brown.
While the meatballs are the in oven, combine the sauce ingredients in a large, unheated saucepan. Whisk well to remove any flour lumps, then place on stove and bring to a boil.
Remove meatballs from oven; place them in the sauce on the stove, stir well, and once the mixture boils, cover and reduce heat to simmer. Simmer on stove about 20 minutes.
*To make this as a freezer meal, freeze the meatballs after they have been broiled, but before they go into the sauce. Combine the sauce ingredients in a separate bag, stir or shake well, and freeze separately. When ready to make, combine the sauce and meatballs in the slow cooker, and cook on high 4-5 hours or on low about 8 hours. Make sure the meatballs reach an internal temperature of 160 degrees, as cooking temperatures and times vary by device.
