I am a big fan of one-pot dinners. I may not be able to get everyone in my family to eat the same thing, but at least I can toss together a big pan of food for my husband, myself, and our daughter, who will eat contentedly while our boys munch on toast or apples or whatever. One meal for 3 people out of 5 is a good step for me! And while I am in love with the original One Skillet Cheesy Beef and Macaroni that inspired the technique behind this dish, I have had to adapt almost all of my recipes since my husband cut out dairy. For this dish, I was craving bold, Italian flavors, so I combined my bolognese sauce with some chicken broth and elbow pasta, and voila! Italian Goulash was born.
