Dutch Oven Pancake

I hosted a brunch potluck at my house last week, and it was so great to try out some new breakfast recipes! My friend brought these oven pancakes that she made in muffin tins, and it reminded me that I should post my recipe. I keep meaning to, especially since it’s the main reason I make my berry compote (as a topping).

I’ve heard this called a German pancake, or a dutch oven pancake. My little boy started calling it a “GIANT pancake” a while ago, so that’s what we call it in this house.

Super simple to make; in fact, I almost didn’t include a printable version, because you just blend some stuff up and pour it in a pan, but it’s good to have proportions on hand. =).

  1. Place the butter in a greased 9 x 13 baking dish, and let it melt in the oven while the oven preheats to 400 degrees.
  2. Meanwhile, blend the remaining ingredients on high for 30-60 seconds, until super smooth.
  3. When the butter is completely melted, pull out the pan and pour in the egg mixture.
  4. Bake for 20-25 minutes, until edges and bottom are browned. (Note: this gets super high in the oven, but deflates quickly after you take it out).
  5. Serve with syrup, berry compote, lemon juice and honey, or any other favorite toppings.
