Since my husband has dairy allergies, I usually try and keep things simple by just making a dairy-free entree for both of us for dinner. Dairy-Free Hawaiian Haystacks
Saute carrot in olive oil. Add vegetables, chicken, and spices, and stir together. Add water and let mixture refresh, stirring occasionally, 5-8 minutes. Add coconut milk and simmer until heated through.
Serve with favorite toppings, such as: pineapple, crunchy Chinese noodles, shredded coconut, tomato, broccoli, cheddar cheese, olives, bell peppers
