Chili-Lime Pork Carnitas

I found a nice pork roast on sale and wanted to give it a lot of flavor.  I remembered seeing a Chili Lime Marinade on the back of my Thrive Life limeade can, and it was the perfect combination of flavors!  I tweaked it a little for my personal taste and turned it into a rub rather than a marinade, and then let the pork simmer away all day in the slow cooker.  Yummy, yummy!

Chili-Lime Pork Carnitas
Instructions
  1. Combine ingredients from chili peppers through olive oil, mix well, and divide in half. Use half to rub all over your pork roast. Place pork roast in crock pot.
  2. Combine the rest of the marinade with the water and bouillon and pour the mixture on top of roast. Cook on low for 8-10 hours or on high for 4-6 hours. Shred meat for tender, flavorful pork carnitas.
