Belvita Breakfast Biscuits Copycat

My kiddos have been big fans of Belvita breakfast biscuits for the last few years. But as I’ve been on a journey to reduce processed foods, I’ve been wondering if I could make something similar myself.

I found this recipe, which was a great base, but I tend to just do my own thing when it comes to a recipe. So after my 3rd or 4th tweak, I decided to make my own post about it. Mostly I just swapped out oil and butter for coconut oil, and I used Thrive Life honey crystals, which gave these a really nice texture. I’m excited to add these to the list of healthy snacks I can make at home, and feel good about including in my son’s lunch box.

Instructions
  1. Combine the melted coconut oil, milk, and vanilla in a large mixing bowl.
  2. In a separate bowl, combine all of the dry ingredients.
  3. Slowly add the dry ingredients into the wet mixture, and turn on mixer or mix by hand until a dough forms. The mixture will be on the dry side, but should stick together; add more flour as needed.
  4. Scoop out 2 Tbsp of mixture, roll into a ball, and then flatten into about a quarter inch circle. I made 18 biscuits with this recipe.
  5. Bake at 350 for 10-12 minutes. Serve warm or cold, and enjoy!
